Tropical Salad with Pineapple Vinaigrette

We have had so many requests for this yummy salad that was served at our Enrichment Luau in June, so here it is:

1 head romaine lettuce, chopped
1 cup diced fresh pineapple
½ cup Macadamia nuts, chopped
3 green onions, chopped
¼ cup flaked coconut, toasted

Whisk together in a small bowl:
3 Tablespoons frozen pineapple juice concentrate
1 ½ Tablespoons water
2 Tablespoons cider vinegar
¼ teaspoon salt
¼ teaspoon pepper
Then slowly whisk in:
¼ cup extra virgin olive oil

Toss salad ingredients together with desired amount of dressing and enjoy!
